Chocolate Chip Oat Bars

Now I don’t usually do this, but with the current times, I said f*ck it. Today on the blog I’m sharing (GASP)…a recipe that isn’t paleo. I know, I’m a fraud. But since Denver has a shelter in place and I’m trying to not go to the grocery store much, I decided to whip up these oat bars I made a while back while living in our old house. Since we are asked to leave our house as little as possible right now, I decided to make these bars the other day with everything I had in my pantry! I love that this recipe creates the most delicious bars with hardly any ingredients! It’s the best. Now I have a very happy husband every morning and I’ll bet you’ll have very happy kids, if your kids are home from school right now.

I feel like I keep talking about kids and parents on the blog lately, but I’m FEELING for them right now. It must be so incredibly stressful to have the kids home full-time, while trying to teach them their school curriculum, and also work full-time to continue to pay the bills. Being a parent was a full-time job to begin with, but now it’s REALLY a full-time job. You parents out there are saints. So I’m hoping that some of my recipes are helping you guys out these days. I recently made my No-Bake Protein Brownies then shared 50 Kid-Friendly Paleo Recipes to hopefully help parents in a small way during this stressful time. I don’t know what it’s like to have kids, but I see my friends with kids and it’s hard freaking work, especially right now. So to all you parents out there – keep it up. You deserve an oat bar for your 24/7 hard work.

It’s so weird to think that this lockdown could go until June. It sounds like it will definitely go through April, which I can wrap my head around, but June? Sh*t man. I’m thinking our trip to Spain in July might be a bust. But hey, I have my health right now so I can’t complain. And honestly, this shelter in place hasn’t changed much about my life. I didn’t leave my house much to begin with, so now I have an extra excuse to not leave the house. Before I had to lie and tell my friends I couldn’t make it to the bar they were all at. Now I just don’t have to lie. This pandemic has made me less of a liar and I am thankful for that. I’m also thankful for these oat bars. Speaking of, it’s time for breakfast.

INGREDIENTS :

  • 3 brown bananas, mashed
  • 1 cup nut butter (almond, cashew, sunflower seed, or other preference)
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cup gluten free old fashioned oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 cup chocolate chunks

DIRECTIONS :

  1. Preheat oven to 350 degrees F. Grease an 8×8 glass baking dish.
  2. In a large bowl, mash the bananas with a fork. Then whisk/mix nut butter, eggs, maple syrup, and vanilla extract. Then fold in oats, cinnamon, baking soda, and salt. Lastly, fold in chocolate chunks.
  3. Pour mixture into the grease baking dish, spread out evenly, then place in the oven to bake for 40 minutes, until cooked through in the middle. Then cut into bars and serve up! They are DELIGHTFUL when served warm!
